This is not about some weird holiday fetish with Cindy Crawford. Nor is about a mole, pronounced as “moel.” Think Austin Powers and “moe-lay;” as in a true labor of love, a deep rich chocolate mole. Using the guidance of the master of the Mexican, Rick Bayless, we engaged in an all day affair. Purees of green tomatoes and tomatillos, roasted nuts, roasted chili seeds and chilis, banana and all other sorts of goodies, including deep rich chocolate were carefully crafted together. This flavor fest was the perfect complement to use to braise some fresh, wild hog. The hog was butchered, soaked and brined to yield a tasty and lean cut that melts in the mouth after braising in this heavenly liquid. Feliz Navidad, indeed!
