Strong to the Finish

Want to be strong to the finish? Then you eats your spinach, like Popeye the Sailorman! Although spinach in the early 20th century was a slang term for marijuana (ever wonder why Popeye ingested it through a pipe and lost all ability to speak, not to mention any sense of grammar??), we’ll stick to the labeled meanings and not get Glenn Beckian into any hidden messages and agendas; true or otherwise. The real problem with being green, is that well, it’s easily boring. So here’s a simple way to kick up your spinach. Creamy Baby Spinach and Feta

  • 1 Tbs olive oil
  • 1 clove garlic
  • 1Tbs chopped shallot
  • 8 oz baby spinach
  • 1 Tbs mascarpone cheese
  • 2 oz feta cheese

Heat the oil over medium heat in a medium sauce pan. Add the garlic and shallot and cook 1-2 minutes, until shallots translucent. Add the spinach. After the spinach has cooked and reduced in volume, and is bright green, add the mascarpone and feta. Cook another 1-2 minutes; salt and pepper to taste and serve.

    Doc, this is earth-shattering!!!!! You mean Popeye was a dopey! Can’t wait to tell my son!
    Anyway, love this combo; I am flooded with swiss chard here and will remember yours. I need to find a substitute for mascarpone.

      @ Joumana: Well…I am just offering an alternative explanation about a guy that sucks green “spinach” through a pipe, can’t speak coherently, loses control of every grammar rule and giggles all the time! The fish, well ,the meal that bites back!

  4. It’s so nice to see spinach getting a spotlight. It’s so oftern hidden in other recipes that’s it’s hardly noticed (except for a fleck of green). It deserves center stage every now and again. Yea!

      @BB: Thanks Barb, I love me spinach too!
      @BB: You are spot on with respect to an innate sense of what to eat. I remember learining in med school that babies will instinctively eat what they need, seeking out the sources of what their body requires and rejecting foods that don’t supplt their needs. Until they “learn” food behavior and it becomes a reward/pleasure/ punishment system. I think “learning” to eat better is really uncovering what we were born with.
