Smokin’ Hot, Perfect Legs, Juicy Breasts

We are, of course, speaking in reference to your Thanksgiving Day turkey. To have that incredible meal, you can prepare your turkey a  number of different ways. But if you brine your bird, no matter how you cook it, it will be perfect! Here is an all purpose poultry brine.

Poultry Brine

  • ½  cup pickling salt
  • ½  cup brown sugar
  • 1 orange, quartered
  • 1 lemon, quartered
  • 4 sprigs of thyme
  • 2 sprigs of rosemary
  • ¼  cup poultry seasoning
  • 1 sliced jalapeño (keep the membrane and seeds intact if you like it hotter)
  • 1 onion quartered
  • 3 ribs celery, roughly chopped
  • 3 carrots, roughly chopped
  • 1/3 cup apple cider vinegar
  • 4-5 qts of water

Add the salt and sugar to the water; heat the water enough to dissolve the salt and sugar. As the mixture cools, add all the other ingredients. Allow to come to room temperature then add the poultry. Brine for at least 4 hours, preferably overnight.
